Raising cattle to full maturity in pristine, remote locations with vast pastures and fresh ocean breezes –proven to be the cleanest air in the world – creates premium beef with unique, full flavor, lush texture and consistent quality. The cooperative proudly maintains the integrity of traditional grass-fed production while taking advantage of technology to trace every cut back to the ranch that produced it.

SUPERIOR BREEDS & MATURATION

Vintage Beef grass-fed cattle breeds all have Angus lineage, and are selected for genetics that produce quality beef. The cattle age on the hoof, eating nothing but grass, and are grown out for at least 5 years – twice as long as the average cattle. This unique vintage beef offers rich, natural flavors and complex marbling with a golden hue, with all the nutritional benefits of grass-fed beef.

These grass-fed cattle forage naturally on immense pastures during their long life cycle. At no point are grains ever introduced, nor do our cattle ever go to a confined feeding operation.

Aged to Order

Available for Take-Out and Dine-In

We are excited to announce the introduction of our new option to our steak program called “Aged to Order.” We will be bringing in a long bone Ribeye Steak called 107, a very special boutique butcher cut perfect for dry aging.

This special Angus beef comes from the 4th generation family owned “44 Farms” in Cameron (TX).

We will reserve a cut for you and dry age to the amount of days that you prefer. We recommend aging for a minimum of 21 days. It offers to every steak lover a great opportunity to try different flavors that are imparted over the time that it is aging.

Price is determined by weight and days of aging.
